The history of Demerara Distillers traces back to 1670, when individual sugar plantations produced their own rum. Eventually, a consortium of sugarcane producers formed a cooperative for exportation. Over the years, through consolidation and mergers, the distillery evolved into the single entity located in Diamond on the eastern shore of the Demerara River. Here, they specialize in crafting "High Easter" rum, renowned for its concentration and refined flavors, distilled in a small still tailored for this purpose.
Under the expert guidance of our Cellar Master, the rum undergoes a meticulous refining process. Maturation in Sherry Oloroso casks seamlessly blends the rancio nuances with vibrant notes of red and dried fruits. Over time, the rancio aromas gracefully fade, giving rise to a symphony of red fruit flavors and subtle nutty undertones. The resulting rum emerges with enhanced silkiness, a velvety roundness, and a gentle natural sweetness that delights the palate.
